I am always looking for SOMETHING NEW to feed my family. I swear, I have never made more meals in my life!
Toddler meals 24/7 around here. So when I find something simple that uses ingredients that are normally in my pantry, I get so excited!
Enter what Ryan likes to call “sweet beef”…
It’s a very basic take on a Korean beef. Sweet, salty, and a kick of ginger. I like to pair it with some rice, usually Jasmine, and it’s a quick and easy delicious dinner.
I start by warming garlic in some oil in my skillet. Then I cook the ground beef till it easily breaks apart. 5 minutes in, I add the sauce. Then I let it simmer on low heat about 15 minutes.
Some salty cashews add a great crunch too!
- 1 cup Jasmine rice
- 1 pound ground beef
- 1 tablespoon vegetable oil
- 2 cloves garlic, peeled and minced
- 1 tsp ground ginger
- 1/4 cup low-sodium soy sauce
- 3 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1/4 cup green onions, chopped
- 1-2 Tbsp chopped cashews
- 1 T lime juice
-
Heat garlic in 2 T of vegetable oil till starting to become aromatic.
-
Add ground beef and break apart. Drain excess fat.
-
In a bowl, combine soy sauce, lime juice, brown sugar, sesame oil, ginger powder. Stir until sugar is dissolved. Add to the beef.
-
Simmer for 15 minutes till sauce is fully absorbed.
