I have wanted to create the perfect banana bread recipe for quite some time…and I am so happy to finally share this AMAZING recipe!
Ryan loves bananas, so we always buy them for the house. But we don’t always use them up before lovely brown spots start to appear!
I have a couple tricks up my sleeve for extending the life of them but this bread is the best way to make something delicious with extra ripe banana.
Let’s be clear, this bread has butter, eggs and all the delicious things in life. But some things are worth eating the right way and this is juts one of them!
I add all the ingredients to a mixing bowl and mash until almost smooth. You can also pulse in a vitamix until smooth.
You want to make sure the center is firm, so make sure to check with a toothpick. I don’t even mind if the edges turn a bit darker. They are actually my favorite part!
What you need:
4 or 5 ripe bananas
2 cups sugar
2 sticks of butter, room temp and soft (1 cup)
6 T buttermilk or regular milk
2 cups flour
2 tsp baking soda
1/2 tsp vanilla extract
Tiny pinch of salt
Preheat oven to 300 degrees.
Place all ingredients in mixing bowl and mash till mostly smooth.
*I don’t like lumps in my bread so I like to pule the mixture in my vitamix about 7 times, just to create a smooth batter. DO NOT OVER BLEND!
Pour mixture in to loaf pans and bake for 50-60 mins or until the center is firm.
Let cool and enjoy!
