I am always looking for fun and creative ways to mix up the treats I give my daughter! She is cookie obsessed and sometimes we can go a bit overboard. Then I discovered Mrs. Thinster’s cookies. OMG. They were a game changer.
They are little crispy bite sized cookies that are made with simple and real ingredients! Nothing extra added to them, just good ol’ fashioned cookies baked with love. Nothing to feel guilty about here!
Then I started thinking…what if I made super tiny cookie sandwiches out of these delicious little crisps? That would be a real treat!
So I started with Mrs. Thinster’s Meyer lemon cookies and I coated one side of each cookie with a small swipe of hazelnut spread. Then I added some thinly sliced banana…
Then, top the banana with another cookie!
Now start the sprinkles! They will stick to the banana and the hazelnut spread pretty easily.
And that’s about it! I love these cookies so much, and not just because they are a smarter choice when it comes to indulging…but because their flavors are off the charts delicious.
