Baileys Original Irish Cream

Mother’s day is definitely a treat-yo-self day! So many of us are working so hard to get back in shape after baby or are just simply pulled in so many directions that we don’t get to spoil ourselves the way we deserve!

Let’s make today the day! I came up with this super yummy “mama” cocktail just for you…the hard working mama that deserves some me time.

Per usual, let’s keep this simple…

coconut

First you are going to heat your oven to 400 degrees and toast some flaked or shredded coconut. Watch it closely, it will burn quick.

coconut cream

Next, pour out a can of coconut cream and whisk. It separates in the can and you want an even consistency.

smoothie

Add banana, frozen pineapple, ice and milk. Blend till smooth.

Pour 6 oz of Baileys Original Irish Cream and blend again to combine.

whipped cream & sprinkles

Garnish with toasted coconut, sprinkles, etc…Whatever your heart desires…

Baileys “Mama” Smoothie
Makes 2
1 small banana
1/2 can coconut cream (in a can)
1 c. chopped frozen pineapple
2 c ice
1/3 c non fat milk
1 c shredded or flaked coconut (toasted)
In a 325 degree oven, toast the shredded coconut tile browned. 3-5 minutes.
In a high powered blender, combine the coconut cream, banana, milk, ice & pineapple. Blend till smooth. Add Baileys Original Irish Cream. Blend again.
Garnish drinks with toasted coconut and sprinkles!
