
I am constantly asked about my favorite way to whip up a quick but impressive appetizer, especially around the Holidays, and my go to answer is always ” a cheese plate”…
But sometimes a simple wedge of cheese just ain’t enough!

During the festive Holiday season I want to jazz things up more than usual, and this simple appetizer hits the spot. It’s a simple mix of berries, balsamic, sugar and citrus…simmered down and poured across gooey cheese.

What could be better? I serve mine with an assortment of my favorite crackers, but a warm baguette would be delicious too!

Baked Blackberry Brie
Total Time: 30 Mins
2 tablespoons sugar
1/4 cup water
1 T Balsamic Vinegar
2 cups fresh blackberries, rinsed
1 tablespoon fresh lemon juice
1-1/2 teaspoons fresh thyme leaves
1 wheel of triple cream brie
pinch of Maldon finishing salt
1 Small piece of parchment paper
In a small sauce pan on medium to low heat, combine berries, balsamic, water, sugar, lemon juice, and thyme leaves. let simmer till juices begin to thicken and berries soften. Turn off heat. Place brie on a piece of parchment paper or cookie sheet, and bake at 350 degrees for 15 minutes. Remove from oven and top with berry compote. garnish with a pinch of finishing salt.
