We had some friends over last night and this seemed like the perfect way to transform our leftovers!
I smothered both sides of a crusty french sourdough roll with a curry aioli…
Sliced up a juicy tomato and drizzled a good quality olive oil across the top. A great sandwich is all about lots of flavors and textures…
I always salt my tomatoes…
Pile that baby arugula sky high!
Add your leftover steak…
And a charred jalapeno…I made a small incision down one side and scooped the seeds out! Then I placed the pepper directly on the burner and charred the skins for about 10 minutes.
A big ol’ squeeze of lime with finish off the tasty sandwich!
For the curry aioli:
1/2 T. yellow curry powder
1 cup mayonnaise
1 tablespoons lemon juice
2 garlic cloves, grated
1 t. whole grain mustard
1 pinch cayenne pepper
