If you are looking for a way to really amp up your favorite turkey sandwich…look no further. This recipe is just for you!
Turkey, Pear, Arugula Sandwich with Blueberry Mayo
2-3 slices Applegate Natural or Organic Roasted Turkey Breast
2 T. Blueberry Mayo
1 bartlett pear
1 c. Arugula
2 slices Applegate Natural or Organic Extra Sharp Aged Cheddar Cheese
Two slices grainy bread
2 T. Caramelized onions
For Blueberry Mayo:
1 c. mayo (can sub Greek yogurt)
3/4 c. Fresh Organic blueberries
2 tbsp lemon zest
2 tbsp lemon juice
1 tbsp honey
Pinch of kosher salt
Gently smash blueberries and simmer all ingredients (minus mayo!) on med/low heat for 6-8 minutes.
Let cool then stir in to a separate bowl with mayo.
1 yellow onion
2 tbsp olive oil
Slice 1 yellow onion and sauté on low heat with 2 tbsp of olive oil. Simmer for 45 mins, tossing regularly.
