I grow a handful of things in my yard…herbs, veggies, figs…but I have an ABUNDANCE of lemons!! I’m always so grateful when out trees put out baskets and baskets of gorgeous lemons, but sometimes I can’t use them fast enough! So I am always looking for ways to use them up before they go bad. Funny enough, my mint plants are actually planted along the base of some of my lemon trees. I like to call them my “cocktail in a pot”…spoken like a true margarita lover!
This lemonade is simple and nothing all that outrageous, but oh-so-delicious! Simply make a ginger “water” by simmering some fresh ginger for about 10 minutes. Strain and cool…

Add a big, gorgeous handful of mint to the batch…
Some cold filtered water, and that’s about it!
