Nothing speaks to me like that sweet and salty combination…especially during the summer months! It’s the flavor profile I crave the most, so when I came up with these yummy tostadas I was PUMPED!!!
If you have never experimented with grilled fruit, what have you been waiting for?? Let’s get you in the game….
Slice a fresh pineapple in to 1 inch rings…sprinkle a spicy seasoning (like Tajin) across both sides and place on a hot grill pan…simple as that! Grilling the fruit brings out more of the natural sweetness and caramelized the sugars. It is yum yum yum.
Cut out the core and dice the edge in to 1/2 pieces.
Time to layer!
Of course this is only a guideline…get creative and do as you wish…
Grilled Pineapple, Tomatillo & Pork Tostada
Total Time: 20 hrs
Prep Time: 5 Mins
Cook Time: 15 mins
Slow roasted pork (see my recipe)
White corn tortillas
1 Pineapple
1 cup shredded mozzarella cheese
1 cup queso fresco
1 bunch fresh cilantro
1 jalapeño, seeds removed
1-2 chopped radish
Tajin seasoning
Tomatillo salsa (see recipe below)
Kosher Sea Salt
Pineapple: Sprinkle Tajin across the pineapple and grill on grill pan till marks appear. Dice in to 1 inch pieces.
Tomatillo salsa: Preheat oven to 375 degrees. Roast 10 tomatillos, 4 cloves garlic, 1 onion. Blend all ingredients with 1 tsp of salt, 1 lime and pinch of cayenne.
Preheat oven to 350 degrees. Lay tortillas directly on rack. heat till crispy. Lay flat to cool. Layer mozzarella, pork, pineapple, tomatillo, queso fresco, radish, cilantro, lime. Top with a pinch of kosher sea salt.
*You better make a bunch…everyone will want seconds.
