Lentils & Stewed Tomatoes For Kiddos

Its about to get real for a second, ok? This will probably be one of those blog posts that Ryan will kill me over when she is a teenager…but here we go!

We have been dealing with some pretty intense constipation over here, and from what I hear…this is very normal for kiddos at this age. Knowing that it is a common issue doesn’t make it any easier for me to watch my sweet baby go through this uncomfortable issue.

Diet is a big factor here…but we are all about veggies, fruits and healthy and well rounded meals in our home…so that can’t be it…we have been at a loss!

Like most other moms…I have consulted my pediatrician, googled, take the issue to my mom groups, etc…the best change came in the form of lentils! Ryan loves them and they are really easy to make…gotta love that…here is a great recipe to keep in your fridge for baby and YOU!

Total Time: 20 mins

1 cup lentils (rinsed!)
1 organic tomato, chopped
1 small clove of garlic, grated
tiny pinch of salt
squeeze of lemon
Bring 2-3 cups of water to a boil, boil lentils till soft. Strain. In same pot, sauté tomato, garlic and a tsp of olive oil till tomato is soft. Top with a pinch of salt and a squeeze of lemon.

*For smaller babies, you can blend and make in to a puree!
