We are fighting’ the good fight over here…teething, cranky moods, runny noses, you name it! Having a one year old is so special for so many reasons…but sometimes it’s tough to watch her be in pain with her teeth! Poor baby!!
The stress of a baby that isn’t feeling so hot can be a lot to deal with, and the last thing you want is to get sick too! Don’t think just because summer is here we are past all the wonderful colds and flu…it can still creep up and get ya!
Enter, the ginger honey & lemon ice cube…these babies sure do make it easy to take care of yourself too. My Dad and his new wife Joan, introduced us to this idea on a recent trip to Texas and I immediately jumped in to action! (Thanks Joan!!) I had to figure out how to make these and fast! After all, it’s mama that holds it all together, isn’t it?

*Makes 1 tray of ice cubes
8-10 inch piece of ginger (depending on how strong you want the ginger to be)
Juice of 1 large lemon (or 2 small)
2 tbsp honey
Peel ginger. Grate all of it in to a pile using a box grater. Bring 2 cups of water to a boil. Add the grated ginger and let steep for 15 mins. Add honey to the warm pot so it fully incorporates. Strain ginger and let ginger broth cool. Once cool, add the lemon juice. Divide evenly across your ice cube tray and freeze.
When you are ready to use them, bring a kettle to boil. Fill your mug and add 1-2 cubes. Add extra honey if you wish!
*While I was recipe testing, I made these a couple different ways. I will tell you…honey doesn’t freeze! So I kept the honey amount low for the cubes. When I make my own cup, I usually add an additional drizzle of honey!
