These miso wings have become my new favorite way to enjoy chicken wings! I just sort of re-discovered miso and all of the great ways you can use it…it’s got this dynamic salty but nutty flavor and can really be paired with all sorts of things.
I added some citrus and heat…and something sweet…and the end result is truly fantastic.
Miso Glazed Chicken Wings
Total Time: 40 mins
Prep Time: 10 mins
Cook Time: 30 mins
10 frying wings
10 drumsticks
2 tbsp melted butter
Kosher salt & Black Pepper
2 tbsp mellow white miso
2 tbsp olive oil
1 tsp sesame oil
1 1/2 tsp fish sauce
1 1/2 tsp chili paste
2 cloves of garlic, grated
Juice of half a lime
1 tsp lime zest
1 tbsp brown sugar
1/2 tsp ground ginger (powder)
Pinch of kosher salt
Preheat oven to 400 degrees. Layer a cookie cooling rack on top of a baking tray and spray with non stick spray.
Melt butter in a small glass dish. Brush butter across wings and shower with salt and black pepper. Arrange wings on cookie cooling rack and place in hot oven. Bake for 10 -12 mins. Flip the wings and bake an additional 5 mins.
Remove wings and drumsticks from oven and brush miso glaze across and all around each side of the wings. Place back in to the oven for another 5-6 mins.
For the Miso Glaze:
In medium skillet, combine remaining ingredients and warm on low heat until everything is evenly combined.
*I like mine on the crisp side, so sometimes I will put the broiler on to get the glaze really bubbling.
Garnish with Furikake (make your own or store bought) and fresh herbs like flat leaf Italian parsley or mint.
