Mother’s Day: Sour Cream Waffles & Spinach Eggs Benedict


Mother’s Day is all about spoiling your mama OR the mama in your life!

This usually begins with what you feed her for breakfast! When we were little, we loved to make my mom breakfast in bed on Mother’s day. I’m sure we made terrible food for her but its truly the thought that counts!!


Spoiling the mama in your life with these sour cream waffles topped with spinach and eggs benny is truly a fabulous way to tell her you love her! I’m kicking traditional eggs benedict up a notch (or 10!) by swapping the english muffin for fluffy waffles!

fresh herbs, chives

Hollandaise Sauce
3 egg yolks
1/4 tsp dijon mustard
1 tsp lemon juice
1 dash hot sauce, like tabasco
1/2 cup butter, melted

Combine all ingredients (except the butter!) in a blender and blend for 5-10 seconds. Melt the butter in a small glass container in the microwave. Approx 1 minute. Set the food processor on high and pour the butter in to the egg mixture. Afterwards, you can also thicken your sauce with a tbsp of mayo, although usually you won’t need to…

*To re-heat this sauce, temper it over warm water in a glass dish, like you would chocolate. Don’t microwave!

3 eggs
1 3/4 all purpose flour
1 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 stick melted butter
1/2 cup sour cream
Pinch of white pepper
4 fresh chives, chopped and sprinkled in to the batter
1 cup milk

Sautee spinach, a slice of god ham and prepare an egg over easy. Top waffles with spinach, ham and egg. pour a generous amount of sauce over the top and garnish with chives. A splash of hot sauce is fabulous too!
