Hummus is an appetizer that needs very little introduction. This one gets summer-ized with farmer’s market zucchini! Lots of lemon and garlic make it zesty, too! Perfect for any summer soiree. Serve with crackers, bread or crudite!

3 small zucchini
1 small can of RINSED chick peas
1/2 half a cup of Tahini
2-3 garlic cloves (I like to roast them first if possible!) *you can also use garlic powder
Juice of one lemon & some zest
1 tsp of salt
1 tsp of white pepper
1 tsp cumin
1 tsp paprika
1 cup of pine nuts (toasted …place under broiler for 40 seconds)
Pulse all ingredients in a food processor or blender till smooth. Add water if needed. Garnish with paprika and fresh herbs.
