Happy National Picnic Day!
This National Holiday celebrates all that is good in life! The outdoors, lazy sunshine days, friends, good books, picnic baskets and sky high sandwiches!
Some of my favorite picnics have happened in the South, (Jackson Square in New Orleans to be exact) so I thought it would be appropriate to make a sky high muffuletta sandwich.
New Orleans is known for them. It’s a sandwich on sourdough bread loaded with an olive spread and lots of meats. The best muffulettas have their fair share of olive oil running out the sides too…so that it runs through your fingers with every big bite!
Total Time: 15 mins
1 cup green olives, pitted
1 cup black olives, pitted
2 tbsp of pimento
1 clove chopped garlic
2 tbsp olive oil
big pinch of black pepper
1 tsp lemon zest
big pinch crushed red pepper
3-5 Slices of deli style ham, turkey, salami, prosciutto, sopressato
Layer olive spread and deli meats high on olive loaf or sourdough.
Of course, it’s not a picnic without sides…and mason jars just seem right!
A great tip for any sides that are being transported in a mason jar…
*Press some sturdy greens into the bottom of the jar..that way there is room for any excess liquid to gather at the bottom without making your food soggy!
Jalapeno Corn Salad
Total Time: 12 mins
4 corn cobs
1 pinch salt
1 jalapeño, chopped & seeds removed
2 scallions, chopped
2 cups arugula
2 small cucumber, seeds scooped out, and diced
Boil water. Clean corn on the cob of all husks and strings. Cut the corn off the cob and toss the warm corn in olive oil & mayo. Add salt, jalapeño, scallions, arugula and cucumber. Toss.
Last but not least…something sweet! Sliced watermelon is never a bad idea! Make it cute on a stick with popsicle sticks, and freeze them to cool down this summer!
