I started making quinoa bites a few years ago and they tend to be a hit every time I make them! My first version was a spinach, goat cheese…then a ham & cheese…
I even made them on the first season of Real Girl’s Kitchen! They are the perfect snack for kids because they are bite sized AND you can hide some veggies in them!
Today, we are skipping the veggies and playing in to the kid in all of us! Today my quinoa bites are all about pizza!
I have a serious weakness for pizza, as I’m sure most people do…and if they don’t, well…I probably wouldn’t trust them.
For a more adult version, you could make these more of a Margherita Pizza…and use some chopped heirloom tomatoes, garlic and fresh basil wth some small pinches of fresh mozzarella…or even better, burrata!
But since today is about cooking for the kiddos, we are keeping this really simple…
Grab the muffin pans and let’s do this…

2 cups cooked quinoa
2 cups Marinara Sauce
1 package of pepperoni
2 cups shredded mozzarella, divided
1 tsp kosher salt
Cook quinoa according to the back of the package.
Preheat oven to 375 degrees. In a large mixing bowl, combine quinoa, marinara, eggs, salt and cheese. Save 1/2 cup of cheese for later! gently mix together till well combine. Fill a non stick muffin tin will quinoa pizza mixture. Top each muffin with a small pinch of cheese and a pepperoni. The cheese acts like “glue” and holds the pepperoni in place! Bake for 10-12 minutes or until muffins have “set”…let cool and enjoy right away!
