It’s National Grilled Cheese Day and in honor of such a great day, I figured I would put a decadent twist on a classic…
I’m adding fresh thyme and soft, caramelized shallots to sourdough and gruyere for an oeey gooey grilled cheese delight!
Another secret? I use mayo to grill my bread instead of butter…heck, sometimes I use both! Mayo tends to evenly brown and just tastes damn good.
So slather up that bread, and get your griddle hot…it’s National Grilled Cheese Day, and I’m ready to celebrate!
How do you celebrate National Grilled Cheese Day?

1 tbsp fresh thyme
1 cup shredded gruyere cheese
2 pieces of sourdough bread
1 tbsp mayo
1 tbsp butter
Melt 1 tb of butter in a skillet a caramelize 1 – 2 shallots of low heat until they are translucent. Add 1 big pinch of fresh thyme. Butter or may one side of each piece of bread and get your griddle or skillet hot. Mayo or butter side down, layer cheese they onion then cheese then bread. Cook till gold brown.
RGK tip: bring your gruyere to room temp before you make your grilled cheese. It will melt faster and your bread will have a better chance of not burning.
