Petrossian is a caviar store in West Hollywood that doubles as a cafe. It’s has a fancy feel but is relaxed at the same time. It is a favorite chill spot for me and my girls on a Saturday or a Sunday. Who doesn’t like some caviar with a bellini on the weekend, ya know?
Anyway…they have this thing called an “egg royale”…and OMG.
It’s an egg with the top cut off and then its filled with super soft scrambled eggs. Its topped with caviar. That’s it, and it is to die for.
I made these babies my own by adding creme fraiche and chives…classic for caviar!
You should also know…you don’t have to buy the super expensive caviar to make these delicious! In fact, there is no need to…since you aren’t eating it on it’s own you aren’t savoring the caviar flavor solo. You can save a little here, so pile that caviar high!

5 Cage Free Eggs
1 jar of caviar
4 tbsp creme fraiche
5 chopped chives
In a small mixing bowl, whip eggs and 2 tbsp of creme fraiche till very well combined. Cook eggs on LOW HEAT stirring constantly. Don’t cook till well done. Top with caviar, remaining creme fruit and chives. Enjoy with champagne!
