Tabbouleh is one of my favorite healthy salads. Classic tabbouleh is just parsley, tomato, cucumber, lemon and oil. It is so bright and flavorful, I actually feel healthier when I eat it! I love to pair this salad with a “Damn Good Roasted Chicken”, pita and some hummus…it’s very Mediterranean!
Sometimes all that parsley is a bit overwhelming…you can soften the bite of the parsley by adding kale! It truly transforms this dish.
Here’s how ya do it…

Serves:10
1 bunch Kale, finely chopped
1 bunch Flat Leaf Italian Parsley, finely chopped
3 large tomatoes, chopped
2-3 cloves of garlic, grated or finely chopped
Juice of 1 lemon
Large pinch of kosher salt
2 tbsp Olive Oil
Combine all ingredients in a bowl, toss well and enjoy!
