Oh kale, it’s been awhile…I do love you a whole whole bunch, but I got burned out on you so we had to take a break…but we have reunited and it feels so good!!!
I was in the mood for something green and a vibrant chopped kale really seemed to hit the spot! Sometimes an old classic just needs a bit of a refresher to make you feel all good inside.
Kale does just that…many of you know about my love of kale…it is so good for you! It’s packed with lots of vitamins and minerals, fiber and iron…plus, it’s extra delicious when your adorable nephew steps in as your hand/ kale salad model for the day…
Tahini Chopped Kale Salad

1 bunch of curly kale, washed and ribs removed
1 small organic apple
1 organic carrot
1 organic avocado
1/4 cup chopped dried cranberries or currants
Wash kale very well and shake dry. Remove all ribs. Chop with large knife. Mix all in ingredients in to a big mixing bowl. Toss Dressing throughout.
2 tbsp Tahini
1/4 cup Olive Oil
1 Lemon, juice
Big pinch of kosher sea salt
10 grinds of fresh ground black pepper
1 splash of your favorite hot sauce
2 cloves of garlic, grated or finely chopped
Combine in small bowl or food processor.
