We are all so familiar with the ever -so- popular avocado toast…but what about hummus toast for breakfast?

Hummus is high in fiber, can help lower your cholesterol, is rich in all those good fats and can encourage you to make healthier decisions when it comes to food. Plus, it’s yum yum yum!

I made this simple lemon garlic hummus and added a roasted beet for a bright vibrant color, but you can always go with the store bought variety. There are a TON of really fabulous “artisan style” choices out there…but making your own couldn’t be any easier!

Seedy Beet-Hummus Toast

Toasted bread
Seeds (I like a mix of chia, sunflower & toasted pumpkin)

1 can drained & rinsed chick peas
1/3 cup tahini
3 tbsp olive oil
2 tbsp lemon juice
1 garlic glove, grated on microplane
Pinch of cayenne
Pinch of sea salt
1 tsp lemon zest

Optional: (but I love the pop of color!) Roasted beet, 1 large or 2 small

*To roast your own beets simply preheat your oven to 400 degrees. Peel beets with a potato peeler and cut away the beet greens and root. Drizzle with olive oil and bake for 30-40 mins depending on the size of your beets. Bake till soft in the center. You can buy these already roasted at most major grocery stores too!

Pulse all ingredients in a food processor till you reach desired thickness. Spread across your favorite toasted bread. Scatter seeds. Top with a pinch of sea salt and fresh mint.
