This is a super simple weekday breakfast but makes for a perfect brunch with the girls too…just pop the champagne to take it up a notch.

1 tbsp truffle oil
1 pinch of sea salt
1 tbsp chopped chives
To make soft boiled eggs:
Bring a pot of water to a slow boil. Carefully place eggs in to boiling water and cook for 5 minutes. Remove from hot water and rinse under cold water for 10 seconds so you can handle them without burning yourself. Peel carefully while eggs are warm so the shells come off easily.
Place eggs in to a bowl and slice in half. Drizzle one tablespoon of truffle oil across the top of eggs and a pinch of sea salt. Garnish with chives. Serve with toasted spears of your favorite bread.
