I had the pleasure of working with the fabulous team at Wonderful Sweet Scarlett’s Texas Red Grapefruit to develop some healthy and exciting recipes, and it could not have been more fun! Not only did I get to make a mess in my kitchen all in the name of “work” but I also got to go to New York to serve up our new creations and spread the word about these super sweet and juicy grapefruits! This was such a fun experience for me because the Sweet Scarlett team is awesome, but I’m also from Texas…(hello!!) so this really was a match made in heaven.
These Grapefruit BBQ Sauce Skewers were so tasty! Making homemade bbq sauce is really simple and adding some fresh squeezed grapefruit juice really brightens the flavor. Fire up your grill and make these babies at your next party!
What you need:
Wooden or Metal Skewers
3 boneless skinless chicken breasts
Handful of cilantro
Sea Salt & Black Pepper
For Grapefruit BBQ Sauce:
Juice of 1 grapefruit & a bit of zest
1⁄4 cup of Ketchup
1 heaping tbsp of Dijon Mustard
1 heaping tbsp of brown sugar
1 tsp of chili powder
1 tsp of cumin
1 tbsp of olive oil
2 tbsp of worcheshire
2 tbsp of chopped scallions or chives
Dice chicken into 1 inch pieces. Slide on to skewers and season with sea salt and black pepper. Grill till chicken is done, or no longer pink in the center. Baste Grapefruit BBQ sauce across each skewer and garnish with cilantro. Grapefruit wedges optional.
