If you have been following my @realgirlskitchen instagram you might know by now that we are in Hawaii to ring in the New Year with some of our favorite friends! The islands are so beautiful and we feel so grateful every time we are lucky enough to get to spend a few days here. There is something really magical about Hawaii. I guess thats why so many people run away to get married here!! It’s just a different way of life. I love how lush and green everything is… I love the farmer’s markets and amazing fresh fish, I love the people and most of all I love the tropical fruits!
Lychee and dragonfruit are two of my favorites…but I get weak in the knees at the smell of fresh Hawaiian Passion Fruit! Here is a super simple recipe for a delightful Lilikoi Margarita…
What you need:
3 Passion Fruits (look for these at Farmer’s Markets)
1 tbsp Agave
Your favorite Tequila
1 Cup Filtered Water
Handful of Fresh Mint
Cut Passion Fruit in half and scoop out meat, seeds and any juice in to a high powered blender or food processor. Add 3 tbsp of water and blend until juicy. Pour through a fine mesh strainer to strain out as many of the pulverized seeds as possible. Some will sneak through, and thats ok!
Add 1 tbsp of Agave or honey and give it a swirl.
I tend to make this margarita in a short cup, filled with ice.
My ratio is 1/3 passionfruit puree, 1/3 filtered water and 1/3 tequila! Garnish with fresh mint.
