Not everything on your Thanksgiving table has to be super naughty! A big pan of gorgeous roasted mushrooms can add beautiful umami flavor and texture to your table…and hardly any calories!
The key to making mushrooms vs yeaa baaby muushroooms is quite simple! Ya gotta buy lots of different types. A big pan of brown button mushrooms equals a whole lot of blah. But a big pan of shiitake, chantrelle, oyster, cremini, button…and even enoki…now that’s a party!
These couldn’t be easier.
Preheat the oven to 450 degrees.
Drizzle some good quality olive oil across a big pan of mushrooms.
Shower with sea salt & fresh herbs (like rosemary, sage or thyme)
Roast for 12 minutes, give them a toss, roast for a few more minutes…I like a nice toast char on mine…so I let mine go a little long. Feel free to cook to your preference.
