I am a big advocate of great leftovers! I love changing them ever so slightly to create a whole new dish. That is exactly what I did here! I used the salmon from last night to kick my ho-hum quinoa salad up a notch!
Add a pile of veggies and voila!
A vibrant and simple salad that is great for you too!
What you need:
2 salmon filets (cooked)
1 cup of red quinoa
1 cup of chopped broccoli
1/4 cup chopped carrots
1/4 cup chopped purple cabbage
1/4 cup chopped red apple
1 tbsp chopped chives
1 tbsp sesame oil
1 1/2 tbsp ponzu
1 avocado, cubed
Juice of 1 lime
Zest of half the lime
RINSE! then cook quinoa according to package instructions.
Chop broccoli. Once quinoa is cooked but still hot, pour over the broccoli so it barely cooks the broccoli and let it sit to cool.
Once cool, add remain ingredients! YUM!
