So many things have changed in our lives! A new baby, a new house! One thing that will never change is my sweet fiance’s love of Italian Sausage & Peppers. I had to learn how to make this dish for him when we first started dating and it has stayed a house hold staple. It is quite simple but certain steps just can’t be skipped. So open a bottle of red wine and let’s get going!
What you need:
Olive Oil
1 slab of butter
1 package of spicy Italian sausage links
4 cloves of garlic
3-4 bell peppers
1 yellow onion
1 handful of fresh Oregano
1 handful of Flat Leaf Italian Parsley
1 can of tomato sauce (no flavor or anything just pure tomato)
Sea Salt
Black Pepper
Crushed Red Pepper
1 glass of red wine
Add olive oil & butter in to a skillet on medium heat. The butter will keep the olive oil from burning.
Brown the sausages on all sides, they will finish off later so don’t cook them through all the way.
Remove sausages and place on additional plate.
Deglaze the pan by scraping the yummy browned bits on bottom of pan and add HALF of the wine.
Add peppers and onion. Let soften a bit. Not all the way!
Now add garlic. Give everything a toss.
Now add tomato sauce, herbs, big pinch of salt, pepper and crushed red pepper. Give everything another toss.
Add remaining wine and sausages. Cover and reduce heat to low. let simmer for 20 minutes.
Serve it up nice and hot!
