Five o’ clock hit and I had to have some comfort food! I am trying to lose the “oh so fun to gain/impossible to lose” baby weight…so my choices in comfort food are limited! Stewed okra sounded just right. After all, okra is one of my favorite summer veggies!
My mother used to make stewed okra for us all the time as kids…here is my take on her classic!
BTW everything is eyeballed…no real amounts here!
I used 4 big handfuls of fresh Okra
1 large can of crushed San Marzano tomatoes
Fill the tomato can with filtered water and set aside
1 yellow onion, chopped
1 small can of corn
1 package of ground beef
Spices: BIG pinch of salt…or two!! Big pinch of black pepper, cayenne and paprika.
In your big stew pot, soften your onion in some olive oil.
Add the ground beef and cook till done.
Add the can of tomato, and the can of water.
Bring to a boil.
Add Okra and corn. Cover and let simmer for 20 minutes.
