I wasn’t planning on blogging today but so many of you tweeted me about the strawberry pie recipe that I snapped a few quick pics so I could share the recipe!
As most of you know I don’t bake ever!!!! Buut this pie is so easy that anyone can tackle it! If I can…I promise you can too!
What you need:
5 overflowing cups of strawberries ( I added a few blueberries because I had them!)
1 premade pie crust
1 cup of sugar
1/2 cup of water
1 tbsp of light corn syrup
2 tbsp of cornstarch
For Cream Cheese/Mascarpone Filling:
1 small container of cream cheese
1 small container of mascarpone cheese
1/2 cup of sugar
2 tbsp of honey
1 tbsp of vanilla extract
Bake the pie crust at 450 degrees for 6 minutes!
In a small pot, combine sugar, water, corn syrup and 1 cup of strawberries smashed (I pulsed mine in a food processor)….this will make that delicious strawberry gel!
Once it starts to bubble slightly, add 2 tbsp of cornstarch and mix
Let simmer for 15-20 minutes till it starts to thicken
Take everything off the stove and let cool! Mix the 4 cups of berries and sugar mixture!
Pipe or spread the sweet cream filling across the bottom of the pie!
Pile high with berry mixture!
Chill in the fridge for 3 hours so it can set!
