Thyme Cauliflower & Potato Mash

Mashed potatoes always make it front and center to our Thanksgiving table! This year we are lightening them up a bit with cauliflower! You can go with just cauliflower for this recipe but I like adding one potato just to keep the same feel.

What you need:

1 head of cauliflower

1 classic brown potato

3 tbsp of butter

1 tbsp of fresh thyme

1-2 tbsp of half & half or whole milk

 

How to:

Boil the potato till almost done. Add the cauliflower. (cauliflower will soften much quicker than the potato)

Remove from water. Everything should be very soft and easily mashed with a fork!

Add butter, milk and thyme!

Serve it up!
