I have never liked OR known what to do with persimmons. They always call my name from the baskets of the farmers markets…so round and bright…so Fall-ish…
I finally decided to experiment with a few of these and love the results!
Upon first bite I thought “ew, no”…but after baking them with loads of honey and brown sugar they turned in to sweet little bites of happiness.
What you need:
Persimmons
1 8oz container of mascarpone cheese
honey
vanilla extract
brown sugar
cinnamon
How:
Preheat the oven to 400 degrees
Slice persimmons in half
Smother them with honey, brown sugar and a pinch of cinnamon
Bake for 20-25 minutes or until soft
In a small mixing bowl, combine mascarpone cheese with 2 tbsp of vanilla extract and 2 tbsp of brown sugar…adjust if needed…this is really a preference thing…
Serve the warm persimmons over the sweet cheese! I added pomegranates for garnish…
