I finally tackled a pie and I gotta tell ya…I feel damn good about it.
This recipe is an old school family recipe that my grandma Nanny used to make and now my amazing Mama makes it every year! It was time I tried my hand at it.
What you need:
Pre-made pie crust (listen, I don’t wanna hear it ok!)
3/4 stick unsalted butter
1 1/2 light brown sugar
3/4 cups light corn syrup
2 tsp vanilla
pinch of cinnamon
pinch of orange zest
1/4 tsp kosher salt
3 organic eggs, room temperature
1 cup of pecans, chopped
How to:
Preheat oven to 350°F
Melt the butter.
Add the brown sugar and mix well
Turn off heat! Mix in corn syrup, cinnamon, vanilla, salt and zest!
Let cool!
In a small separate bowl, whip 3 eggs
Add to sugar mixture and combine.
Layer pecans in the bottom of the pie crust.
Pour mixture over the top.
Bake for 30 minutes. Then cover with foil and bake addition 15 or until pie is set.
