If you are like me, a great kale salad is already in your weekly rotation. I am, however, always looking for a great new spin.
Butternut squash is the perfect addition at this time of year! I love this salad because it has a great “meaty” texture thanks to the squash and a bright & light finish thanks to the lemon and pomegranate!
Add this yummy salad to your Thanksgiving table and everyone will thank you.
What you need:
Kale
Pomegranate seeds
1 avocado
2 cups of cubed butternut squash (luckily you can buy it already cubed this time of year!)
Goat Cheese
Olive Oil, Lemon & Sea Salt and Pepper
For squash: season with a pinch of nutmeg, heavy sprinkle of brown sugar and cinnamon
How to:
Season & Roast butternut squash at 450 degrees for 30 minutes.
Clean & massage that kale!
Arrange salad! Layer up all the goodness and enjoy!
