Time to celebrate my faaaavorite holiday! National Grilled Cheese day! Time to bust out your favorite cheeses and a panini or grill pan! However you like to make them, today is the day.
Luckily I have the perfect tomato soup for you too. Tomato soup and grilled cheese make the perfect pair, so don’t forget the tomato soup on a day like today!
Roasted Chipotle Tomato Soup
7 quartered tomatoes
2 quartered yellow onions
Drizzle of Olive Oil
1 Tbp sea salt
1 cup veggie stock
1 can crushed tomatoes
1/2 cup red wine
4 heads of roasted garlic (see recipe below)
2 red bell peppers, quartered seeds removed
1 tsp black pepper
1 cup torn basil
1/4 cup chipotle peppers in adobo sauce (can)
Pre heat oven to 350
Drizzle tomatoes and onions with olive oil
sprinkle with sea salt
Bake for 30 minutes or until soft and sunken
Combine veggie stock, crished tomatoes and red wine in a pot
Bring to a slow boil
Add tomatoes, onions, garlic, red peppers, black pepper, basil, chipotle.
Simmer for an hour
Run the soup through a food mill, vitamin or emulsion blender.
Preheat oven to 350
Slice the top off of each garlic pod
Drizzle with olive oil, a pinch of sea salt and a sprig of rosemary
Wrap each pod in aluminum and bake for 20 minutes
My Favorite Grilled Cheese:
Butter one side of each piece of bread. Layer Mozzarella, Basil & Heirloom tomatoes. place of hot grill pan till cheese is super melty!
