Spinach, Broccoli & Mozzarella Pastry Bites

There are no words for how yummy these puff pastry bites are…seriously, delicious. These are a great Thanksgiving appetizer but could even be served with your main meal as the option to bread rolls! Plus, if you are cooking for kids…these are a great way to sneak some broccoli and spinach in to their tummies!

What you need…

Sheet puff pastry

Chopped broccoli 1 cup

Chopped spinach 1 cup

1 cup of mozzarella cheese

1 egg


Preheat your oven to 350 degrees

Spray a muffin tin with coconut oil, pam or butter

Cut the puff pastry in to squares…you will see when you lay the sheet out how this should be done. Basically, 3 sections vertically and 4 sections horizontally.

In a mixing bowl, combine broccoli, spinach, mozzarella and 1 egg. Mix.

Press each puff pastry square in to each of the muffin tins. Fill with broccoli, spinach and cheese mixture.

Bake approx 10-15 minutes or until edges of puff pastry are golden brown.
