With the summer season coming to an end, it is high time to indulge in fresh summer vegetables like tomatoes, zucchinis, summer squashes and then some! It is peak season for many of these vegetables.
One of my favorite food blogs, Smitten Kitchen, recently posted this recipe for Zucchini Parmesan Crisps, highlighting one of my favorite summer vegetables. Baked, not fried, these are a lovely and tasty chip replacement to be made in large batches and enjoyed as the perfect late summer snack. The parmesan cheese and the panko breadcrumbs give these baked zucchinis that extra crunch.
