I had such a blast visiting Sara & Jaque this morning over at NBC New York Live. In honor of National Sandwich Month, I shared some of my favorite sandwich ideas with the ladies of NBC. They were so fun! I can’t wait to go cook with them again!

1. Prosciutto, Fig & Gorgonzola Cream Tartine
Prosciutto di Parma
3-4 sliced figs (discard ends)
1/4 cup gorgonzola cheese
1 tbsp. milk
Small handful of arugula
Sprinkling of roughly chopped walnuts
Toasted sourdough bread
To make gorgonzola cream, mix gorgonzola with milk in small bowl. Press milk and gorgonzola with fork until creamy. Spread gorgonzola cream onto sliced sourdough bread. Layer prosciutto. Top with arugula. Arrange figs on top of arugula. Sprinkle chopped walnuts. Drizzle with balsamic glaze.
2. Truffle Ricotta Caprese
1/4 cup of Ricotta
Sliced tomatoes (use heirloom if possible)
Juice & zest of one lemon
Toasted Rustic bread
Mix lemon zest with ricotta cheese in small bowl. Generously spread lemon zest ricotta on toasted bread. Arrange sliced tomatoes on top with torn basil leaves. Drizzle with olive oil and lemon juice. Finish with truffle salt.
3. Honey Almond Chicken Salad Tartine
2 cups chopped grilled chicken breast
1/4 cup sliced almonds
1/4 cup chopped celery
1 tbsp mayonnaise
1 tbsp greek yogurt
1 tbsp honey
Toasted oat bread
Flat leaf parsley for garnish
In large bowl, mix all ingredients together. Place chicken salad on top of toasted oat bread and garnish with a sprig of parsley.
