One thing every ‘real girl’ should know how to throw down in the kitchen is one damn good roasted chicken. It will be your boyfriends favorite meal to come home to…your group of girlfriends will request this healthy dinner at all of your girls nights…and when it’s your turn to cook family dinner this will be your go-to dish.
There are all kinds of techniques and additions to a basic roasted chicken, however, I like to stick with a couple classics…
Buying the bird
Double check with your butcher that the chicken is already cleaned. All you will need to do is remove a small bag from inside.
Slice fennel, lemon, onion, garlic and shallots in to wedges. Push deep in to the cavity of the bird. Press rosemary and thyme in to the cavity as well. Brush with butter, shower with sea salt and black pepper.
To tie or not to tie…
It’s really up to you wether or not you string up the bird. Sometimes I do, sometimes I don’t.
If you do…wrap under the tail, around the legs (2x), over and through the thighs, under the fold in the wing, double knot.
Ready to cook…
Scatter some lemon and onion wedges around the bird in a glass dish. Place bird in a hot oven at 450 degrees for about an hour.
Place a thermometer in the thickest part of the chicken without hitting the bone…it should read 165 degrees.
