Thanksgiving Roasted Sage Carrots

I took a trip to the farmer’s market in Ojai, Ca this past weekend with some friends and we made these carrots for dinner. They are super simple and packed with wonderful flavor. I loved the look of these mini carrots mixed in with the traditional big orange ones. So cute!

Carrots

Olive Oil

Sage

Sea Salt

Pre heat oven to 350. Wash carrots and arrange on a greased baking sheet or tin foil. Warm 1 cup of olive oil and 15 sage leaves on low in a small pot for 15 minutes. Remove old leaves and drizzle desired amount of oil across the carrots. Chop some additional sage leaves and scatter across the carrots with a generous pinch of sea salt. Bake for 15 minutes.
