Cauliflower is a great way to fill your belly during carb free week! It’s filled with fiber and has the ability to trick you in to thinking you are eating a grain like couscous. Enjoy with a nice piece of grilled fish or chicken.
1 head of cauliflower
1/3 cup of parmesan cheese
1 tbsp of olive oil
generous pinch of sea salt
1/4 cup of low fat milk
generous grind of black pepper
a couple sprigs of fresh thyme
Cut the cauliflower in to smaller pieces and pulse through a food processor till small but chunky. If you don’t have a food processor you can use a large sized cheese grater. Once grated, simmer with remaining ingredients in a skillet of medium heat. Once warm, remove from heat and serve!
