Roasted Bone Marrow and Parsley Salad

I generally have a laid back approach to cooking and I love easy, healthy dishes but I also believe that women need to have a couple tricks up their sleeve. This roasted bone marrow appetizer is the ultimate secret weapon. Granted, this isn’t a healthy recipe but it definitely is a treat. Bone marrow is an indulgence that seems intimidating but is really quite simple. Plus, you look like a total pro when you present such a bold appetizer to your guests. I roasted bones for a dinner party at my house a few weeks ago and they were a major hit, especially with the boys. I also think this buttery flavorful goodness oozes major sex appeal. What’s hotter than a chick that isn’t afraid to take risks…in the kitchen and in life. So, be bold…roast some bones.

Bones (you can find them at any grocery store or butcher)

Italian flat leaf parsley, approx 1 cup chopped

Capers, 1 tbsp

1 Lemon

1/2 cup of celery, sliced thin

2 tbsp of Olive Oil & a pinch of sea salt

Crusty french bread

Preheat oven to 450 degrees. Arrange bones on a baking tray, sprinkle with sea salt and bake for 20 minutes. In a mixing bowl…combine olive oil, parsley, lemon, capers, celery and a pinch of sea salt. Layer parsley salad and marrow on a toasted piece of french bread. Yum Yum!
