Watermelon, Radish and Avocado Tacos
Summer is quickly approaching and nothing quenches your thirst quite like watermelon. I love it paired with creamy avocado, crunchy radish and toasted pine nuts. They are so easy to make and stylish enough to serve as a party appetizer. I love, love, love these fruity roll ups.
What you need: Watermelon, Pine Nuts, Avocado, Radish, Butter Lettuce Cups, Olive Oil, White Wine Vinegar, lime, Sea Salt and Black Pepper
How to: Toast Pine Nuts under the broiler for 1-2 minutes or until they turn golden brown. Cut avocado and watermelon in to cubes. Slice radishes. Fill each lettuce cups with all the ingredients above, drizzle olive oil and splash vinegar across each taco. Shower with sea salt and pepper. Add a squeeze of lime if desired. Serve immediately before avocado starts to turn brown.
