Spicy Pita Fattoush Salad

Last night I spent the evening with 4 of my favorite girlfriends, if you follow my twitter (@Hayliek) then you might have even seen some of our pictures. My long time bff Bev chose a Mediterranean restaurant called Mantee for us…and it was to die for. Not only did we run into friends, we had a great bottle of wine and an even better meal.  The Fattoush salad was one of my favorites! Here is my take on it…

What you need:

Romaine lettuce, radishes (anyone notice these are my fave??), cucumber, tomatoes (I used heirlooms), 1/2 cup fresh mint, 1/2 cup fresh dill, 1/2 cup italian flat leaf parsley, juice of one lemon, 1/4 cup good olive oil, whole wheat pita bread, spicy seasoning blend, sprinkle of sea salt, black pepper, paprika.

How to:

Heat oven to 350degrees. Lightly drizzle Olive Oil over pita bread and sprinkle spicy seasoning. Bake till brown and crispy. Approx 6 mins.

Chop it up…Toss it up.

 

*A traditional Fattoush actually calls for a spice called powdered Sumac. It’s niche and a little hard to find…If you are feeling like an adventure, find it! It really adds a whole other level of flavor. I, however…was too lazy for the hunt tonight. Great with…great without.

**To make this salad even easier, pre-made pita chips work great too!
