Here is a simple Thanksgiving idea! Let’s give thanks for something simple. So many of the time we stress out around the holidays. Trying to make the perfect meal or perfect table setting instead of just enjoying the free time and each other. Cheers to an easy recipe that everyone will love!
Roasted root vegetables nestled in to a big pile of greens. Yummy.
What you need:
2 Sweet Potatoes
2 Rutabagas
2 Turnips
2 Carrots
2 Beets (be prepared to have pink fingers, I actually kind of like it)
Olive Oil
Sea Salt & Black pepper (fresh grind that shizz, you will thank me)
Lemon
Thyme
Arugula
How to:
Pre-Heat oven to 400 degrees. Wash and chop all your roots! Veggie brush recommended. Scatter them across a greased glass baking dish. Drizzle with Olive Oil and add a couple sprigs of thyme or rosemary. Keep an eye on them, mine softened after about 20 minutes.
The Real Girl’s Kitchen Classic Vinaigrette is highly recommended.
**I topped with some goat cheese but feel free to skip it!**
