Butternut Squash, Goat Cheese, Pecans and Cherries.

 

No Thanksgiving feast is complete with my favorite veggie. Butternut Squash. I could literally write love songs about it…and i’ll take it anyway I can get it. In a ravioli, soup or in it’s purest form…roasted. Love it. Love it. Love it.

Here, It’s simply tossed in a good olive oil, sea salt, brown sugar and sage. Roasted at 400 degrees for 20 minutes. Topped with an herb-y goat cheese, toasted spicy pecans and dried cherries.

 

Now, that’s true love.
