It finally happened, I actually baked a pumpkin pie…and it turned out fabulous!
Actually, that’s a total lie. My sister and one of my dearest friends (Beverley Mitchell-Cameron) baked a pumpkin pie, but I watched and snapped pics along the way. Don’t I get some points for that?
The truth is, it was actually very easy and I think even an amateur (ahem..terrible) baker like myself could pull this off!
What you need:
1 cups of pumpkin puree (not pie filling!)
1 egg, 2 yolks
1 8oz cream cheese
1 cup of half & half
1 cup of white sugar
Half a stick of butter (soft)
1/4 tsp of kosher salt
1 tsp of vanilla extract
1/2 tsp of ground cinnamon
1/2 tsp of ground nutmeg
1 pre- made pie crust, or graham cracker crust
Home made whipped cream (substitute lime flavor with nutmeg and cinnamon!)
How to:
Preheat the oven to 350 degrees F.
Place pie crust in the oven approx 10 minutes, pressing it in to the pie pan as you go…
Mix cream cheese with a hand mixer, add pumpkin. Mix.
Add sugar and salt. Mix.
Add eggs & yolks, half&half, and butter. Mix.
Add the vanilla, cinnamon, nutmeg. Mix.
Pour pumpkin mixture in to pie crust and bake 50-1 hr, depending on your center. (You want a firm center)
Whip up that whipped cream and give it a big dollop and a kiss of cinnamon.
