I’ll tell you a little fact about me, since we are really just starting to get to know each other. I love truffles! The mushroom kind, not the chocolate kind. I love fresh truffle shavings, truffle oil and truffle salt. I love it on scrambled eggs, salads or french fries. I will take it anyway I can get it. Truffle slut? That’s me.
You might be saying “everybody knows how to make a caprese salad” but this one is a little different. There is a drizzle of balsamic AND white truffle oil. Prepare yourself for greatness.
What you need:
Tomatoes
Mozzarella or if you are fancy, burrata
Basil
Aged balsamic vinegar
Pinch of sea salt
White truffle oil
How to:
Slice tomatoes and mozzarella, stack them, tear basil and sprinkle across, drizzle with white truffle oil and aged balsamic. Add a pinch of sea salt.
Serve on a bed or arugula with a scoop of RGK pesto!
