This chick-pea free hummus recipe came to me from my dear friend Vanessa King, writer/producer extroadoaire and gluten-free eater. It’s so terrific and when something is good, it must be shared. So now… I share with you. It’s simple and delish.
What you need:
3 zuchini
1/2 half a cup of Tahini (store bought, right out of a jar)
2-3 garlic cloves
Juice of one lemon (I used a big lemon)
2 tsp of salt
1 tsp of black pepper
1 tsp cumin
1 tsp paprika
2 roasted red peppers ( I used them straight out of a jar)
1 cup of pine nuts (toasted …place under broiler for 40 seconds)
How To:
Place all your ingredients in the Vitamix or a food processor…blend!
** RGK tip: You can use this hummus in the traditional way as a dip, or use as a spread on a sandwich as a healthy (and yummy) mayo replacement **
