If your like me, you look for ways to cut calories and carbs as often as possible. It makes me not feel so guilty for the times when I indulge in sweets or something rich and amazing. This “burger” is a great option, and tasty enough to trick yourself into thinking you are eating a burger! So throw these chicken burgers and portobello mushrooms on the grill at your next pool party…your bikini will thank you.
What you need:
Large portobello mushroom caps (this is your bun)
Lean Ground chicken
1 carrot, finely chopped
2 stalk of celery, finely chopped
1-2 cloves or garlic, finely chopped (u can skip or use a powder, but I suggest the real deal)
basil, finely chopped
seasoning ( if you have a meat season, or salt and pepper always does the trick. I threw in some lemon pepper)
Olive Oil
1 cup of bread crumbs
How to:
heat large skillet or grill pan over med heat
In a large mixing bowl, combine chicken, carrot, celery, garlic, basil and half a cup or bread crumbs
shape into patty, coat with a thin layer of remaining breadcrumbs
brush olive oil on cap side or portobello cap, sprinkle with a pinch of salt
place patties and caps on grill pan till patties are cooked throughout…only about 2 minutes for the portobello caps.
Build your dream burger! To stick to your diet friendly version add tomato and butter lettuce. To splurge, add some cheese and avocado.
