Pineapple Mint Margaritas

Happy belated July 4Th! Ours was spent by the pool with hotdogs, mac & cheese, corn on the cob and coronas. I would post it, but then there would be no denying the fact that I actually ate all that…yikes….back to the diet grind.

Now to the Vacu Vin Pineapple slicer. I always buy these “gimmicky” kitchen tools and they never turn out like I thought they would. Well, this one does! It’s easy to use, easy to clean and the finished product speaks for itself.

Party Idea: buy a pineapple (alittle on the smaller side) for each guest, core out the middle. Fill with smoothies or my personal preference…pineapple mint margaritas!

Pineapple Mint margaritas:

2 cups of tequila (I like patron silver)
2 cups of fresh lime juice
2 cups pineapple juice
2 cups of triple sec
a couple sprigs of fresh mint (place in bottom of each pineapple and muddle…fancy word for mash)
option:a teaspoon of agave or stevia (you can skip if you like them more tart, pineapple should be sweet enough)

Combine all ingredients in a large pitcher and chill in fridge or shake with ice. Pour into each Pineapple “cup” and serve!
